Mini Reuben Sandwiches

It amazes us how simple a concept these little bites are…they are just open faced, mini- versions of the actual Reuben sandwich.

But they still surprise guests…because they are cute and delicious and…”why didn’t *I* think of that?”!

The deli-rye¬† breads are usually available in the bread or deli sections of the supermarket…they are about 1 inch square and perfect for these sandwiches. You can always cut regular-sized bread to the shape you want too. Pumpernickel bread is also delicious for this munchie. We’ve been making these at The Manor for 24 years and everyone loves them!

1/2 loaf deli-rye bread
2 packages deli corned beef (about 20 slices)
Thousand Island dressing
1 jar sauercraut, drained well
2 cups swiss cheese, shredded
yellow mustard

Place bread squares on a cookie sheet. Spread Thousand Island dressing liberally
on each. Layer corned beef, a dollop of sauerkraut and a topping of cheese.
Bake in a 350 degree oven for 5-8 minutes until cheese melts.
Serve with an option of yellow mustard as a condiment.
